I stayed at Holiday Express in Plainsboro for 2 weeks (purpose was a collaboration with the Plasma Physics Lab - PPPL, which is at walking distance). The location is convenient, just a 5 minutes ride from downtown Princeton, and next the railway station at Princeton Junction. The hotel is in the midst of the Forrestal wood, you are just in town without feeling the traffic congestion at all: on the contrary, the feeling is that of being in the countryside.
The hotel is brand new (actually, renovated, it was Wyndham before), the rooms are gorgeous, and you are filled with amenities: free internet, free breakfast, a 35 meter swimming pool with spa, gym, and lounge bar (these last shared with Crowne Plaza, which is the other half of old Wyndham). You come back from work, and you go in the swimming pool to relax. Simply fabulous.
If you add the warmth of the personnel (I remember Dave in particular), this makes the best choice in town.

Visited New Jersey for Thanksgiving and stayed at the HI Express for the 3rd time. Every stay is a fantastic experience hosted by a top notch staff. Will continue to stay there in the future!

The room was good and comfortable, clean. The wifi signal was very poor. In the bathroom it was written that if you need any bathroom toiletries just call us and we will get it for you. But when we called to ask for toothbrush and toothpaste the lady at the reception very rudely told to come down to reception and have it. She was very cold at the time of check-in, not even smile on her face. The hotel is bigger in area and so who will want to just walk down to get all the things you want to the reception. Come on atleast keep enough staff to attend the requirements of your customers who pay for it. So left a note on paper in the bathroom next morning for toothbrush and toothpaste and the cleaning staff left it over there.
