Puebla gastronomy is internationally recognized and a special season is lived from July to September, where the most elegant dish of Mexican cuisine comes to the tables to delight sight, flavor and heart: Chile en Nogada. The reason why the chile en nogada is prepared between these months is because of the temporality of its essential ingredients: the pomegranate, the Castilla walnut, the apple, the pear and the Creole peach, typical of these months. Few know the origin of this dish, which reflects the tradition and cultural heritage of Mexico. The origin of chili goes back to the Viceroyalty of New Spain, this dish was a dish invented by the nuns of the Santa Mónica convent in Puebla, who developed a recipe to celebrate Agustín de Iturbide's birthday.
