Tomorrow, August 15, Citizen Rail opens at the corner of 16th and Wewatta, offering soulful, ingredient-driven food alongside a classic and creative beverage program. Throughout the newest addition to Denver’s Union Station neighborhood, the inspiration of the open flame abounds - from the attention-grabbing side-by-side wood-fire grills at the center of the restaurant to the charred, smokey ingredients found in the cocktail list.
The exposed grills are the heartbeat of Citizen Rail and where Executive Chef Christian Graves will draw guests in with the scent of house-butchered and aged cuts of beef, pork, lamb, game and seafood perfected over live wood fire.
“Cooking over the live fire is the most traditional of American cooking methods, and the honest approach I’m taking to this technique at Citizen Rail means I can delve into countless flavors and preparations,” said Chef Graves. “With our in-house butchering and dry-aging program, we can pull the right flavors from every cut of meat - from head to tail - on our native hard and fruitwood grills to create contemporary dishes inspired by the tradition open flame cooking.”
Wood-fired ingredients also are incorporated into modern interpretations of time-honored cocktails developed by Lead Bartender Chris Burmeister.
“The ability to combine ingredients from the live fire with my passion for making as many ingredients in-house as possible drove the creation of the Citizen Rail cocktail menu,” said Burmeister. “Everything we’ve included on our list - from cocktails to beers and wines - was selected because it’s perfect to enjoy at the bar while also complementing Chef’s menu.”
Burmeister will char, smoke, blister, roast, flame, torch and grill ingredients to pair them with house-made syrups, milk punch, falernum and more to create inventive cocktails with classic inspiration.
Citizen Rail will feature only local-crafted beers, that speak to the talents of the Colorado brewing community, who are producing exceptional beers in such a wide variety that the list can cover styles ranging from lively and dry Saisons, to savory Stouts, to a selection of food-driven, tart and funky Sour beers, all without leaving the Front Range. The wine list will reflect the changing seasons while showcasing small producers and unique offerings.
Dinner will be served Sunday through Wednesday from 5:00 p.m.-10:30 p.m., with the bar open until 11:30 p.m. Dinner is offered until 11:00 p.m. Thursdays through Saturdays, with the bar open until midnight. Citizen Rail will open with daily breakfast service; brunch and lunch service will be added at a later date.
