The kitchen puts a modern twist on our countrys culinary heritage, from smoked haddock, salmon and spring onion fishcake to pan roasted Brecon lamb rump, Blas y Tir vegetables and red wine jus to chicken, Carmarthen ham and leek pie. Desserts elevate traditional puddings, such as Bara Brith bread and butter pudding, and apple and summer berry crumble.
