Under the guidance of two-Michelin-starred Chef Consultant Nikos Roussos, every dish is a thoughtful tribute to Crete's bold culinary traditions. All menus are guided by the seasons, drawing on locally sourced seafood, organic olive oils, and aromatic herbs to craft dishes that are as rooted in place as they are refined in execution.

Begin the day with an international breakfast buffet rich with local delicacies and à la carte options. At midday, a laid-back poolside snacks menu sets a relaxed tone by the pool, complemented by a refined à la carte lunch for those seeking something more considered: think dakos salad, tuna with basil pesto and Cretan graviera, or lobster pasta for two.

As evening falls, the à la carte dinner menu invites guests to linger a little longer. Slow-cooked lamb kleftiko, calamari sautéed with Cretan tsikoudia, skioufichta pasta with graviera cream, and traditional galaktoboureko to finish.
