A culinary icon in Central Indiana, Chef Baker previously served as President of HÄIV Hospitality, which specializes in concept development of hotels, restaurants, and food halls from inception to opening. Craig has brought The AMP at 16 Tech to life in recent years, served on-the-go cuisine out of his Ghost Mobile Kitchen, and previously cooked in the kitchens of The Local Eatery and Pub, Bent Rail Brewery, Napolese, and Plow and Anchor. Prior to his time in Indianapolis, Craig worked at various restaurants in Pennsylvania and along the eastern seaboard. He then moved to the West Coast to Portland, Oregon, and into the kitchen of Assaggio, an award winning, authentic Italian restaurant, where he served as chef de cuisine.
Baker has been recognized for his work in industry publications and culinary competitions, including competing in and winning the Best Chef category in the World Food Championships. One of Baker’s restaurants, The Local has also been recognized by the national culinary press for its mission to support local economies, farms, artisans, and philanthropy. In November 2024, Baker led Team Indiana in the 12th Annual World Food Championships being held in Indianapolis, where they were named “2024 Finalist for Best Sandwich in the World.”
